ROASTED RED PEPPER BRUSCHETTA


Tim and I went to a tasty Italian restaurant for one our date nights a few months back. The appetizer was so fabulous (well, everything was) that we determined to make it at home. Here is our recipe...give it a try...we LOVE it! A perfectly simple meal in itself with a side salad - oooh!

Roasted Red Pepper Bruschetta

Artisan bread loaf (we just used plain old French bread)
Freshly sliced mozzarella cheese
1/2-1 Red bell pepper
Freshly grated Parmesan cheese
Chopped, fresh basil
Balsamic glaze (recipe below)

Grill or roast red pepper, cool enough to handle then slice into squares. Slice bread and layer mozzarella cheese and red bell pepper on top. Put in a 350 degree oven for about 10-15 minutes...just enough to brown the edges of the bread and melt the cheese. Remove from oven and sprinkle with fresh Parmesan cheese and basil. Drizzle balsamic glaze over top and enjoy!

Balsamic glaze
1/2 c balsamic vinegar
1 clove garlic, minced
1/2-1 tsp freshly grated ginger
1 Tbl granulated sugar
1 Tbl cornstarch

Combine all ingredients into a small sauce pan on medium heat. Bring to a boil stirring constantly (watch it - it can burn fast!) Once it has come to a boil, it should be thickened enough to drizzle over top of the bruschetta!

DOING FINE

Despite what these pictures may look like, Cameron is doing fine. His EEG was completely normal and he should grow out of these "breath holding seizures" by the age of 4 - hopefully sooner - things are looking up! - Especially knowing that we won't have to put him through this again!

HIPPITY HOPPITY!

Happy Easter!! Our weekend was busy and far from the relaxation that we had intended, but still fun. We were very entertained by the boys with all the Easter Bunny hoopla...they practically ate candy all weekend (but now it will magically disappear)! Hope you all had a fabulous weekend!

The baskets! Everything has to be exactly the same at our house, I hope I'm not the only one having to referee over who has more jelly beans and the cooler toy.



Digging into the baskets! The Easter Bunny hid eggs and jelly beans all over the house. Unfortunately, I didn't get any very good pictures of them putting as many jelly beans as they could find into their mouths before they realized that they could collect them in containers.



The boys' table. Mostly for crafts. I intended to have them eat there too, but Tim and I would have been very lonely at the big kid table all by ourselves.



I had so much fun setting the table for Easter. I think it turned out quite nice. You may notice only two place settings...yes...by ourselves again this year. Last year it was just what we needed, but this year was harder to be alone...we miss you family!
